State Fair Corn Travels from Field to Fair Overnight

The roasted corn served at the Minnesota State Fair makes the trip from a local farm to the fairgrounds in less than a day.

Untiedt’s Vegetable Farm has supplied sweet corn to the fair’s Corn Roast for more than 20 years.

Workers hand-pick every ear near Monticello in the morning. The corn is then chilled at the farm’s Waverly facility and trucked to Falcon Heights overnight, ready to be roasted the following day.

Untiedt’s grows a specially selected Mirai variety for the fair. The farm says it produces a tender, sweet ear that holds its size and flavor during roasting.

The Corn Roast sells about 25-thousand ears on an average day during the 12-day fair.
